Red Velvet Baptism Cake with White Chocolate Cream Cheese Icing

My latest cake was a Baptism cake for a colleague's little boy. My colleague and his wife were fairly specific with what kind of design they wanted - they had found two designs that they loved and wanted me to make a 'hybrid' of the two cakes. So that left me with a a little bit of creative movement, but they definitely wanted the cake to be covered with white chocolate cream cheese icing rather than white fondant.

My first two thoughts when I received this cake order were (in this order):
1. OMG white chocolate cream cheese icing sounds absolutely HEAVENLY - why haven't I made it before?
2. I was excited about the design but also a bit worried that I might not be up to the challenge - not that it was a hugely difficult cake, but my specialty is fondant covered cakes and I've hardly made any butter cream and icing covered cakes to date.

I'm not one to shy away from a challenge though, so of course I accepted the order.

Black and Gold Glitter Engagement Cake

I was very honoured and excited when my friends Amy and Billy asked me to make this cake for their engagement - it was a very unique cake design and very different to any of the cakes I've previously made so I knew it would be a fun challenge.

Amy asked for the bottom tier to be red velvet and the top tier to be carrot cake - which I thought was really cool as I've never been asked to make a carrot cake before - and it's one of my favourites.

The bottom tier was so tall I had to bake four individual cakes to make it the right height. That's a LOT of red velvet cake!

Polka Dot Wedding Cake

In April this year I was very honoured to make a wedding cake for one of my oldest friends, Lauren, who I have known since we both started high school.

Lauren and her lovely fiance Adrian were set on a polka dot cake from the very first moment they asked me to make it - and it matched the slightly quirky and very sweet theme of their wedding perfectly. Laren also supplied colour swatches for me to match the colours of the fondant polka dots to - I just love an organised Bride!

Super Mario Cake

Probably my most detailed cake ever - this Super Mario cake was made for a good friend's 30th birthday in March this year. A fair bit of research went into this one as I wanted to make sure I got all the details from the game 100% accurate. I spent a bit of time on the internet finding pictures of Mario, Luigi and the other bits and pieces to make sure I had enough templates.

Fairy Cake

In March this year I got to make this super sweet fairy birthday cake for a little girl turning 4 years old. Up to this point most of the kids cakes I had made were for little boys (Soccer Ball Cake, Wiggles Cake, Dinosaur Cake). Being a girl who loves pink and all things girly I was naturally very excited to be making a pink fairy cake.

Pretty Teapot Cake

February is always a great month because that's when my birthday is! And who doesn't get excited about their own birthday cake - even if you end up making it yourself ;-)

This year to celebrate my birthday I hosted an afternoon tea for my friends and so when I stumbled across this great tutorial explaining how to make a teapot cake I knew immediately that I had found the perfect birthday cake design.

Dinosaur Birthday Cake

In February one of my best friend's once again asked me to make a cake for one of her boy's birthday - and this time his party was going to be a dinosaur theme! I knew straightaway that this cake was going to be very fun to make :-)
